Yummy Molasses Cookie Recipe for the Holidays

I dig, dig, DIG these cookies. They have a gingerbreadish taste to them but are soft, and oh-so-delicious. I can't take credit for this recipe, as it was given to me by a workshop friend, Carolyn Rae Williamson. I did, however, use different ingredients based on what I had available. So here goes:

Ingredients needed:
  • 1/2 cup margarine (I used Imperial, the stick kind)
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup molasses (with the syrup at the grocery store -- the only thing I had to buy)
  • 2 1/4 cup flour
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 tsp. ginger
  • sugar for sprinkling on top
Directions:

Heat oven to 375. Mix dry ingredients in bowl. Soften margarine with a mixer (I pop it in the microwave for 7 seconds to get it nice and mushiable), add brown sugar and blend. Add egg and mix. Add Molasses, repeat. Stir dry ingredients and, again, mix (you'll be getting a great arm workout if you don't use beaters!) Chill for 30 minutes to an hour.

You can form into a ball, but I wouldn't try it with your hands unless you want to feel like Slimer. I used two spoons, one to scoop, the other to push onto the greased cookie sheet. I also used a cookie presser, which this dough works awesome form, and they came out in perfect little snow flake shapes. Sprinkle sugar on the tops, and if you want to make sure it sticks, dab some water on the top of each cookie. Bake for 8-10 minutes depending on how big you made them and how soft you want them.

Not sure how many it makes, as the recipe doesn't say and I already devoured all mine (with the help of friends and family). I'd say 2-3 dozen but it all depends on how big you make them.
